Strawberry Rice Krispie Treats

Strawberry Rice Krispie Treats combine the crispness of strawberry-flavored Rice Krispies and melted marshmallows with freeze-dried strawberries for a fruity twist on the classic snack. The marshmallow and butter base creates a chewy texture, while the incorporated freeze-dried strawberries add a delicate tartness. These treats are topped with a smooth buttercream frosting flavored with vanilla and can be garnished with fresh strawberries. Ideal for a sweet snack or dessert, these bars balance crunch and creaminess.

Ingredients

  • 6 tablespoons butter unsalted
  • 2 packages mini marshmallows 10 ounces each, divided use, Campfire® brand
  • 9 cups Rice Krispies strawberry flavor
  • 1 ounce freeze dried strawberries roughly chopped
  • ½ cup butter room temperature, unsalted
  • 1 ½ cups powdered sugar sifted
  • 1 ½ teaspoons vanilla extract pure
  • 1-3 teaspoons milk
  • strawberries fresh, for garnish

Instructions

  1. Line a 9 x 9-inch baking pan with parchment paper or foil and spray with nonstick cooking spray.
  2. In large pan, melt butter over low heat. Set aside 1 1/2 cups marshmallows. Add the rest of the marshmallows to the pan and stir until completely melted.
  3. Gradually add crisped rice cereal; stirring until well coated. Fold in the reserved 1 1/2 cups of marshmallows and freeze dried strawberries until thoroughly incorporated.
  4. Using a buttered spatula or clean hands to firmly press the mixture into the prepared pan. Cool completely.
FOR THE BUTTERCREAM
  1. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat butter on medium-high speed for about 5 minutes.
  2. With the mixer on low speed, slowly add in powdered sugar, and continue beating until well blended.
  3. Add in vanilla, and 1 teaspoon of milk. Mix on low speed until incorporated.
  4. Beat at high speed until frosting is smooth and fluffy; about 4-5 more minutes. If your frosting is too thick, gradually add a little more milk, 1 teaspoon at a time until you reach the desired consistency.
  5. Spread or pipe frosting onto cooled marshmallow cereal treats and top with fresh strawberries.

Notes

  • The bars can be cut into large or smaller pieces depending on your pan size preference.
  • The buttercream frosting is piped on top for decoration and added flavor.
  • For thinner, more delicate bars, use a 9 x 13-inch pan instead of 9 x 9 to spread the mixture more thinly.
