Strawberry Salsa

Here's a nightshade free Strawberry Salsa recipe that can be used for a naturally sweet and tangy topping or dip. This recipe is allergy friendly (gluten, dairy, shellfish, nut, egg, and soy free) and suits the autoimmune protocol (AIP), paleo and vegan diets.

Ingredients

  • 1 cup strawberries diced
  • 1 cup jicama peeled and diced
  • 1 shallot minced
  • 2 tablespoons cilantro chopped, fresh
  • 2 tablespoons lime juice White Vinegar would be an ok substitute, fresh
  • salt to taste

Instructions

  1. Combine all the ingredients into a medium size bowl.
  2. Stir to combine.
  3. Serve immediately.
