Ingredients
- 2 cups all purpose flour
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 Tablespoon baking powder
- 1/2 cup 1 stick unsalted butter, very cold
- 1/2 cup buttermilk
- 1 egg
- 2 teaspoons vanilla extract
- 1 cup fresh strawberries diced
Glaze (optional)
- 1 1/2 cups powdered sugar
- 2 Tablespoons milk
Instructions
- Dice the butter into small pieces about 1/4 inch in size. Put the butter in the freezer to chill while you measure out all the ingredients.
- Preheat the oven to 375 degrees F.
- Wash, hull and dice the strawberries. Cut them into small pieces so there is strawberry in every bite.
- In a large bowl whisk together the flour, sugar, salt and baking powder. Add the chilled butter and cut it in with a pastry blender, two forks or your hands until the mixture is the size of small crumbs.
- In a small bowl combine the eggs, buttermilk and vanilla extract. Whisk it to mix it well.
- Pour the wet ingredients and strawberries into the dry ingredients and stir until everything is moistened and comes together in a ball.
- Dump the dough out onto a cutting board or counter top sprinkled with flour. Press the dough into an 8 inch circle. Use a sharp knife to cut the dough into 8 wedges.
- Transfer the wedges to a baking sheet lined with parchment paper. Leave space between the scones for them to expand a little bit.
- Bake in a 375 degree oven for 20-25 minutes, until they are golden brown.
- If adding a glaze let them cool for a few minutes. Then mix the powdered sugar and milk and drizzle it over the strawberry scones.
Cup of Yum
Notes
- Very cold butter is the key to delicious scones!
- Work quickly with the dough so it doesn’t warm up.
- Store leftovers in an air tight container at room temperature.
