Ingredients

  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 Tablespoon baking powder
  • 1/2 cup 1 stick unsalted butter, very cold
  • 1/2 cup buttermilk
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 cup fresh strawberries diced

Glaze (optional)

  • 1 1/2 cups powdered sugar
  • 2 Tablespoons milk

Instructions

  1. Dice the butter into small pieces about 1/4 inch in size. Put the butter in the freezer to chill while you measure out all the ingredients.
  2. Preheat the oven to 375 degrees F.
  3. Wash, hull and dice the strawberries. Cut them into small pieces so there is strawberry in every bite.
  4. In a large bowl whisk together the flour, sugar, salt and baking powder. Add the chilled butter and cut it in with a pastry blender, two forks or your hands until the mixture is the size of small crumbs.
  5. In a small bowl combine the eggs, buttermilk and vanilla extract. Whisk it to mix it well.
  6. Pour the wet ingredients and strawberries into the dry ingredients and stir until everything is moistened and comes together in a ball.
  7. Dump the dough out onto a cutting board or counter top sprinkled with flour. Press the dough into an 8 inch circle. Use a sharp knife to cut the dough into 8 wedges.
  8. Transfer the wedges to a baking sheet lined with parchment paper. Leave space between the scones for them to expand a little bit.
  9. Bake in a 375 degree oven for 20-25 minutes, until they are golden brown.
  10. If adding a glaze let them cool for a few minutes. Then mix the powdered sugar and milk and drizzle it over the strawberry scones.

Notes

  • Very cold butter is the key to delicious scones!
  • Work quickly with the dough so it doesn’t warm up.
  • Store leftovers in an air tight container at room temperature.
