Ingredients

  • 9.5 oz (2 cups/270g frozen strawberries
  • 1/3 cup (80ml) water
  • 2 tablespoons white sugar
  • 4 tablespoons (60ml) Cointreau
  • 1.5 cups (300ml) prosecco

Instructions

    Cup of Yum
  1. To make the simple syrup, put the sugar and water in a saucepan and bring to a boil. Once the sugar has dissolved turn off the heat and let it cool completely (you should have around 3-4 tablespoons of sugar syrup).
  2. Put the strawberries, cooled sugar syrup, Cointreau and prosecco in a blender and blitz until completely smooth.
  3. Pour into glasses and serve.

Notes

  • Serve straight away - because it's frozen this isn't a cocktail you can make in large quantities in advance. Although you can double the recipe to serve more it's best served immediately. Using strawberry sorbet - if you have strawberry sorbet you can use this instead (about 2 scoops per cocktail) just make sure to skip the simple syrup or the cocktail will be too sweet. Serving suggestions - you can enjoy this as an after-dinner drink/dessert, a palate cleanser in between courses of a big meal or just to cool down on a hot summer day with some nibbles.
