Strawberry Shortcake Ice Cream Bars

Ingredients

For the Crust:
  • 20 golden Oreo cookies
  • 3 Tablespoons melted unsalted butter
  • 1 quart vanilla bean ice cream
  • 1 pint strawberry sorbet or ice cream
For the Topping:
  • 10 golden Oreo cookies
  • 2 Tablespoons unsalted butter softened
  • 1 oz package Freeze Dried Strawberries

Instructions

  1. Line an 8 or 9-inch square baking pan with parchment paper. Set aside.
  2. For the crust, add cookies into food processor and pulse until fine crumbs. Add melted butter and stir with a fork.
  3. Press into the bottom of prepared baking dish. Freeze while you prepare topping.
  4. For the topping, pulse oreos into large crumbs. Place in a bowl and set aside. Add strawberries to food processor and pulse until fine crumbs. Add to bowl with cookies.
  5. Add softened butter to cookie bowl and mix until blended. Set aside.
  6. To assemble, spread about 2 1/2 cups of vanilla ice cream over the cookie crust. Top with all of the strawberry sorbet. Add the remaining vanilla ice cream over the top, using an offset spatula.
  7. Top dessert with cookie crumble. Freeze for at least 3 hours or overnight.
  8. To serve, lift ice cream out of dish with parchment paper. Cut into squares and enjoy. Freeze leftovers for up to one month.

Notes

  • Read the directions entirely before starting. Make sure you’ve softened the items before assembly.
  • Freeze dried strawberries can be substituted with strawberry gelatin powder if desired. 
  • Try to find a strawberry sorbet or ice cream that contains fresh berries. Not only does it look pretty, but has great texture. The strawberry ice cream I used was lighter in color because it was a natural strawberry ice cream. If you prefer a dark pink, choose a different brand 🙂
  • Change up the flavor by using chocolate oreo cookies and chocolate ice cream!
  • No need to remove the cream filling from the Oreo cookies.
