Strawberry Shortcake Truffles
Strawberry Shortcake Truffles blend crushed golden Oreos and freeze-dried strawberries with cream cheese into a smooth mixture, shaped into balls then coated with melted white candy melts and coconut oil. The coating is finished with a sprinkling of reserved crumbs for texture. This no-bake sweet treat offers a creamy, crunchy contrast and fruity undertones reminiscent of strawberry shortcake.
Ingredients
Truffles
- 26 golden Oreos
- .8 ounce freeze-dried strawberries bag
- 5 ounces cream cheese softened
Coating
- 1 1/4 cups white candy melts
- 1 teaspoon coconut oil
Instructions
- TrufflesAdd the Oreos and freeze-dried strawberries into a food processor and pulse until a fine crumb forms.
- Scoop out about 2 tablespoons and set aside for sprinkling.
- Add the cream cheese into the food processor and pulse until a ball forms.
- Using a 1 1/2 tablespoon cookie scoop or whatever size you prefer, scoop the truffles out onto a piece of parchment paper.
- Roll the truffles between your hands to form a ball.
- CoatingIn a small microwave-safe bowl, add in the candy melts and coconut oil. Microwave for 30-second intervals and stir. Repeat until the candy melts are completely melted.
- Dip the truffles into the candy melts and tap off any excess coating by tapping the fork on the side of the bowl.
- Use a skewer and push the truffle back onto the piece of parchment paper.
- Quickly sprinkle with the crumb that you set aside before the coating sets up.
- Store in the fridge.
