Description

These truffles start by pulsing golden Oreos and freeze-dried strawberries into fine crumbs. Cream cheese is added and combined until a firm dough forms, which is then portioned into bite-sized balls. After shaping, the truffles are dipped into melted white candy melts mixed with coconut oil for a smooth, shiny coating that sets firmly.

The truffles are finished by sprinkling some of the reserved crumb mixture on top before the coating hardens, adding a bit of texture and visual interest. Stored in the refrigerator, these truffles offer a sweet, creamy bite with subtle fruit flavor and a crisp cookie base. The recipe requires no baking and is suitable for making ahead.

  • 26 golden Oreos
  • .8 ounce freeze-dried strawberries bag
  • 5 ounces cream cheese softened

Coating

  • 1 1/4 cups white candy melts
  • 1 teaspoon coconut oil

Instructions

  1. TrufflesAdd the Oreos and freeze-dried strawberries into a food processor and pulse until a fine crumb forms. 
  2. Scoop out about 2 tablespoons and set aside for sprinkling.
  3. Add the cream cheese into the food processor and pulse until a ball forms.
  4. Using a 1 1/2 tablespoon cookie scoop or whatever size you prefer, scoop the truffles out onto a piece of parchment paper.
  5. Roll the truffles between your hands to form a ball. 
  6. CoatingIn a small microwave-safe bowl, add in the candy melts and coconut oil. Microwave for 30-second intervals and stir. Repeat until the candy melts are completely melted.
  7. Dip the truffles into the candy melts and tap off any excess coating by tapping the fork on the side of the bowl. 
  8. Use a skewer and push the truffle back onto the piece of parchment paper.
  9. Quickly sprinkle with the crumb that you set aside before the coating sets up. 
  10. Store in the fridge.
