Ingredients

Cream Cheese Pastry
  • one batch Cream Cheese Pastry
Strawberry Filling
  • ⅔ cup white sugar
  • 2 ½ Tablespoons cornstarch
  • 1 pinch salt
  • 3/4 cup apple juice
  • 3 cups fresh strawberries

Instructions

  1. Prepare one batch of cream cheese pastry
Strawberry Filling
  1. In a medium saucepan mix the sugar, cornstarch, and salt with a whisk.
  2. Stir in the apple juice
  3. Cook over medium heat.
  4. Stir constantly until the mixture is smooth and thick, about 3 minutes
  5. Let it cool for 10 minutes.
  6. Take your pre-baked tart shells and spread a small quantity of the glaze over the bottoms and sides of the shells
  7. Take your washed and hulled fresh strawberries and arrange them in the tarts, slicing the berries to fit if needed
  8. Spoon the remaining glaze over the berries in the tarts, covering them well
  9. Place them in a covered container in the fridge until ready to serve.
  10. Before you serve them, garnish with whipped cream on top if desired.

Notes

  • If you have any left over filling, it is delicious on ice cream or toast!
