Strawberry Vanilla Pancakes

These pancakes are so thick and fluffy! We love them with loads of fresh strawberries and a little syrup.

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Silk Vanilla Almond Creamer
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 cup diced strawberries

Instructions

  1. Add the flour, baking powder, baking soda, and salt to a medium mixing bowl and whisk to combine.
  2. Add the creamer, egg, and vegetable oil to a small bowl and whisk to combine.
  3. Stir the wet ingredients into the dry ingredients until combined. Do not over mix.
  4. Heat a griddle or skillet over medium heat and spray with non-stick cooking spray.
  5. Use a 1/4 cup measure to pour batter onto pan. Batter will be thick.
  6. Cook 2 minutes or until bubbles form and pop. Flip and continue cooking until golden brown and cooked through.
  7. Heat maple syrup over low heat until warm. Stir in vanilla.
  8. Top pancakes with diced strawberries and vanilla maple syrup to serve.
