Strawberry Waffles (Vegan & Gluten-Free)

These Strawberry Waffles combine gluten-free flours with plant milk and ground flaxseed to create light, vegan waffles studded with finely diced fresh strawberries. The waffles offer a tender crumb with fruity bursts from the berries and a mild sweetness from maple syrup and vanilla. Cooking in a waffle iron yields a crispy exterior and soft interior, making them a filling breakfast option.

Ingredients

For the wet ingredients:
  • 1 1/2 cups plant milk
  • 2 Tbsp. Flaxseed ground
  • 1 Tbsp. pure maple syrup
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract
For the dry ingredients:
  • 1 cup all-purpose flour gluten-free
  • 1 cup almond flour super-fine
  • 1 Tbsp. baking powder
  • 1/4 tsp. ground cinnamon (or more to taste)
  • 1/4 tsp. salt
Fold-in:
  • 5 oz. strawberry about 1 cup finely diced, fresh

Instructions

  1. In a large mixing bowl, add all wet ingredients. Whisk and set aside.
  2. In a separate medium bowl, add all dry ingredients. Stir well.
  3. Add dry ingredients to wet. Whisk until just combined.
  4. Finely dice strawberries, stems removed. (I dice mine extra-fine to seamlessly combine with the batter.) Fold strawberries into the mixture.
  5. Turn on and preheat waffle iron to desired setting. (I set mine to medium/medium-high.)
  6. When iron is fully heated, scoop out batter and place in the middle of waffle iron. (I use a 1/2-cup measuring cup.)
  7. Close lid and let cook 5-7 minutes or until steam has completely stopped. Be sure not to open during cooking!
  8. When fully cooked, carefully remove waffle and continue process with the remaining batter.

Notes

  • For nut-free version, substitute almond and all-purpose flour with 2 cups oat flour, though texture may be denser.
  • Use a non-stick waffle iron without extra oil, or lightly spray if needed for your machine.
  • Bob's Red Mill gluten-free all-purpose flour is recommended but can adjust based on availability.
  • Finely dice strawberries to evenly distribute them in the batter.
