Strawberry Waffles (Vegan & Gluten-Free)
Description
This waffle recipe uses gluten-free all-purpose flour and almond flour to achieve a balanced texture that holds together well without eggs or dairy. The ground flaxseed acts as an egg substitute for binding, while maple syrup and vanilla add natural sweetness. Finely diced strawberries are folded into the batter to distribute fruit evenly throughout the waffles.
The batter is cooked in a preheated waffle iron without oil if non-stick, crisping the exterior and keeping the inside fluffy. Cooking takes 5 to 7 minutes until steam stops, indicating doneness. The result is a tender waffle with mild almond and strawberry flavors suitable for a vegan diet.
Options include substituting oat flour in place of the all-purpose flour, though this may alter the texture slightly. The waffles freeze well and can be reheated as needed, providing a convenient gluten-free breakfast or snack.
Ingredients
For the wet ingredients:
- 1 1/2 cups plant milk
- 2 Tbsp. Flaxseed ground
- 1 Tbsp. pure maple syrup
- 1 tsp. vanilla extract
- 1/4 tsp. almond extract
For the dry ingredients:
- 1 cup all-purpose flour gluten-free
- 1 cup almond flour super-fine
- 1 Tbsp. baking powder
- 1/4 tsp. ground cinnamon (or more to taste)
- 1/4 tsp. salt
Fold-in:
- 5 oz. strawberry about 1 cup finely diced, fresh
Instructions
- In a large mixing bowl, add all wet ingredients. Whisk and set aside.
- In a separate medium bowl, add all dry ingredients. Stir well.
- Add dry ingredients to wet. Whisk until just combined.
- Finely dice strawberries, stems removed. (I dice mine extra-fine to seamlessly combine with the batter.) Fold strawberries into the mixture.
- Turn on and preheat waffle iron to desired setting. (I set mine to medium/medium-high.)
- When iron is fully heated, scoop out batter and place in the middle of waffle iron. (I use a 1/2-cup measuring cup.)
- Close lid and let cook 5-7 minutes or until steam has completely stopped. Be sure not to open during cooking!
- When fully cooked, carefully remove waffle and continue process with the remaining batter.
Notes
- For nut-free version, substitute almond and all-purpose flour with 2 cups oat flour, though texture may be denser.
- Use a non-stick waffle iron without extra oil, or lightly spray if needed for your machine.
- Bob's Red Mill gluten-free all-purpose flour is recommended but can adjust based on availability.
- Finely dice strawberries to evenly distribute them in the batter.
