Streusel Pumpkin Chocolate Chip Bread

Ingredients

Loaf Ingredients:
  • 2 cups sugar
  • 2 whole eggs
  • 1 1/4 cup pumpkin puree
  • 1/4 cup vegetable oil or your preferred choice in oil
  • 2 1/4 cup of flour
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1/4 tsp of ginger
  • 2 cups of semi sweetened chocolate chips
Streusel Ingredients:
  • 6 tbsp butter melted
  • 1/2 cup brown sugar
  • 3/4 cup flour
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350 degrees
  2. Spray two loaf pans with cooking spray
  3. In a bowl, cream together sugar, eggs, pumpkin puree, and oil
  4. In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger
  5. Add dry ingredients to wet ingredients and mix till combined
  6. Gently stir in chocolate chips
  7. Pour halfway full in both loaf pans and set aside
  8. Now for the streusel topping, combine butter, brown sugar, flour, and cinnamon
  9. Crumble evenly overtop both loaf pans
  10. Bake for 55-60 minutes, check-in between every 10-minute mark to make sure loaves are not burning
  11. Once fully baked, set aside to cool for 10 minutes then pop loaf's out of the pans and cut accordingly and serve!
