Stuffed Sweet Potatoes

These stuffed sweet potatoes are loaded with flavor and nutrients! We fill them with a savory BBQ chicken mixture, then top them with extra sauce and fresh herbs. It’s a delicious and easy-to-make dish that’s perfect for any occasion!

Ingredients

  • 4 medium sweet potatoes
  • 2 cups shredded chicken rotisserie or grilled
  • ½ cup no-sugar-added BBQ sauce store-bought or homemade
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • salt and pepper to taste
  • 1 avocado diced (for topping)
  • fresh cilantro chopped (for garnish)

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Bake the Sweet Potatoes: Wash the sweet potatoes and pierce them a few times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.
  3. Prepare the BBQ Chicken Filling: In a medium bowl, combine the shredded chicken, BBQ sauce, garlic powder, onion powder, salt, and pepper. Mix until everything is well coated.
  4. Stuff the Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Slice each potato in half lengthwise and gently fluff the insides with a fork. Spoon the BBQ chicken mixture generously into each sweet potato half.
  5. Serve: Top with diced avocado, fresh cilantro, and a dollop of Greek yogurt if desired. Serve warm and enjoy!

Notes

  • Choose a homemade or store-bought BBQ sauce that contains no added sugars. You can also make your own by mixing tomato paste, apple cider vinegar, mustard, and spices.
  • Substitute shredded chicken with shredded turkey, cooked quinoa, or even plant-based protein for a vegetarian option.
  • Feel free to add additional toppings such as diced tomatoes, jalapeños, or shredded cheese for extra flavor and texture.
  • These stuffed sweet potatoes can be prepared in advance; just reheat in the microwave or oven before serving.
