Ingredients
- 4 medium sweet potatoes
- 2 cups shredded chicken rotisserie or grilled
- ½ cup no-sugar-added BBQ sauce store-bought or homemade
- ½ tsp garlic powder
- ½ tsp onion powder
- salt and pepper to taste
- 1 avocado diced (for topping)
- fresh cilantro chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C).
- Bake the Sweet Potatoes: Wash the sweet potatoes and pierce them a few times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.
- Prepare the BBQ Chicken Filling: In a medium bowl, combine the shredded chicken, BBQ sauce, garlic powder, onion powder, salt, and pepper. Mix until everything is well coated.
- Stuff the Sweet Potatoes: Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Slice each potato in half lengthwise and gently fluff the insides with a fork. Spoon the BBQ chicken mixture generously into each sweet potato half.
- Serve: Top with diced avocado, fresh cilantro, and a dollop of Greek yogurt if desired. Serve warm and enjoy!
