Stuffed Taco Biscuits

Stuffed Taco Biscuits are made with homemade bread stuffed with seasoned ground beef and topped off with melted butter and shredded cheese.

Ingredients

Beef Mixture:
  • 1 pound ground beef , 85/15
  • 3 tablespoons taco seasoning (about 1 packet)
  • 1/2 cup water
  • 1 tablespoon corn masa
  • 1 tablespoon tomato paste
  • 1 garlic clove , minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
Biscuit Recipe:
  • 1/4 cup whole milk
  • 1/4 cup taco sauce
  • 1 tablespoon taco seasoning
  • 2 cups biscuit mix , packaged
To finish:
  • 1 tablespoon unsalted butter , melted
  • 1/4 cup cheddar cheese , shredded

Instructions

  1. Preheat oven to 425 degrees and line a baking sheet with parchment paper.
  2. In a large skillet add the ground beef, water, corn masa, tomato paste, garlic, cumin, oregano, crushed red pepper, and lime juice.
  3. Cook until browned and the sauce has evaporated leaving a mostly dry beef paste mixture, about 8-10 minutes.
  4. Let the beef mixture cool while you make the biscuit dough.
  5. In a large bowl whisk together milk, taco sauce, and taco seasoning.
  6. Whisk in the biscuit mix until just combined.
  7. Add dough to a floured surface, knead 5-6 times.
  8. Roll to 1/2-inch thickness.
  9. Using a 2-inch wide biscuit cutter, cut out round biscuits.
  10. Add mixture to the middle of the dough and place on baking sheet.
  11. Brush the bare edges of the biscuits with melted butter and top the beef with shredded cheese.
  12. Bake for 9-11 minutes.
