Ingredients
Beef Mixture:
- 1 pound ground beef , 85/15
- 3 tablespoons taco seasoning (about 1 packet)
- 1/2 cup water
- 1 tablespoon corn masa
- 1 tablespoon tomato paste
- 1 garlic clove , minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
Biscuit Recipe:
- 1/4 cup whole milk
- 1/4 cup taco sauce
- 1 tablespoon taco seasoning
- 2 cups biscuit mix , packaged
To finish:
- 1 tablespoon unsalted butter , melted
- 1/4 cup cheddar cheese , shredded
Instructions
- Preheat oven to 425 degrees and line a baking sheet with parchment paper.
- In a large skillet add the ground beef, water, corn masa, tomato paste, garlic, cumin, oregano, crushed red pepper, and lime juice.
- Cook until browned and the sauce has evaporated leaving a mostly dry beef paste mixture, about 8-10 minutes.
- Let the beef mixture cool while you make the biscuit dough.
- In a large bowl whisk together milk, taco sauce, and taco seasoning.
- Whisk in the biscuit mix until just combined.
- Add dough to a floured surface, knead 5-6 times.
- Roll to 1/2-inch thickness.
- Using a 2-inch wide biscuit cutter, cut out round biscuits.
- Add mixture to the middle of the dough and place on baking sheet.
- Brush the bare edges of the biscuits with melted butter and top the beef with shredded cheese.
- Bake for 9-11 minutes.
