Stuffed Zucchini Boats Recipe

Ingredients

  • 3 medium sized zucchinis
  • 1 pound pork sausage (I prefer hot Italian sausage, but you can use the mild if you don’t like any kind of spice.)
  • 1 cup yellow onion (diced)
  • 1 cup red or yellow bell pepper (diced)
  • ¾ cup marinara sauce (or spaghetti sauce)
  • 1/4 teaspoon salt (plus more to taste)
  • 1/4 teaspoon pepper (plus more to taste)
  • ½ cup Colby jack cheese (shredded)
  • garnish with parsley or fresh basil (optional)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Cut zucchini in half lengthwise.
  3. Microwave zucchini for 2-3 minutes to soften slightly.
  4. When cool enough to handle, use a spoon to scoop out zucchini pulp.
  5. Place zucchini skin side down in a casserole dish and set aside.
  6. In a skillet pan over medium high heat, brown sausage, onion, and bell pepper until meat is no longer pink in the middle.
  7. Take off heat and drain grease.
  8. Stir in sauce, salt and pepper.
  9. Spoon mixture into zucchini boats until all the zucchini are filled.
  10. Sprinkle with cheese and bake for 20-25 minutes or until zucchini is fork tender.
  11. Garnish with parsley if desired.
