Sugar Free Raspberry Jam uses fresh or thawed raspberries combined with chia seeds, vanilla, water, lemon juice, and powdered sweetener to create a naturally thickened fruit spread. Ingredients
- 1 cup / 150g raspberry fresh; if frozen, give time to defrost
- 3 tbsp / 24g chia seeds
- 1 teaspoon vanilla extract or vanilla paste
- ⅓ cup / 80 ml water
- 1 tsp / 4ml lemon juice
- 1 tablespoon powdered sweetener or more if needed
Instructions
- Mash the raspberries with a fork.
- Combine all ingredients in a jar or bowl and stir.
- Leave in the fridge overnight or wait 20 minutes for the jam to thicken.
Notes
- This jam has approximately 8 grams net carbs per tablespoon serving and makes around 10 servings total.
- Keep the jam refrigerated in a sealed container for up to one week to preserve freshness and texture.
- For extended storage, freeze the jam in portioned containers or ice cube trays for up to three months, thawing as needed for each serving.
- Grinding the chia seeds before use produces a smoother jam, and passing the mixture through a sieve results in a jelly-like consistency.
