Sugar Free White Chocolate

Ingredients

  • 4 ounces (by weight) food grade cacao butter, chopped into small pieces
  • ⅓ cup powdered erythritol or equivalent powdered sweetener, more or less to taste (how to make powdered sweetener)
  • ¼ cup THM Pristine Whey Protein Powder
  • ½ teaspoon sunflower lecithin, optional
  • 2 teaspoons vanilla bean powder or 2 teaspoons pure vanilla extract or beans form 2 inches worth of a vanilla pod

Instructions

  1. In a double boiler (you can create a double boiler by putting about an inch of water in a saucepan and putting a stainless steel or glass over the mouth of the pan), melt the cacao butter.
  2. Remove from the heat and add the remaining ingredients, whisking until well incorporated (you may wish to run the whole mixture in a blender for a bit).
  3. Pour into a glass dish or a chocolate chip mold and allow to harden.
  4. Store in an airtight container at room temperature, in the refrigerator, or in the freezer.
