Sukuma Wiki

Sukuma wiki is a traditional Kenyan dish that is prepared with collard greens, tomatoes and onions and typically served with ugali.

Ingredients

For the sukuma wiki
  • 2 lb sukuma greens (collard greens), chopped
  • 1 onion , chopped
  • 2 tomatoes , chopped
  • 2 tablespoons vegetable oil
  • salt
For the ugali
  • 2 cups corn flour
  • 4 cups water
  • 1 tablespoon margarine (optional)
  • Pinch salt

Instructions

  1. Heat oil in a large pan. When hot, add the onion and sauté until translucent.
  2. Add tomato and sauté for 2 minutes.
  3. Add collard greens and sauté for an additional 2 minutes.
  4. Add ½ cup (100 ml) of water and then salt to taste. Let the mixture simmer until the collard greens have reached the desired tenderness, about 5 to 10 minutes.
  5. Serve warm with ugali (recipe below)
Ugali
  1. In a large saucepan, bring the water to a boil then add the margarine and salt. Slowly add the corn flour then wait for the water to come to a boil again.
  2. Using a wooden spoon, start stirring and reduce the heat to medium when the consistency thickens. This process should take between 10 to 20 minutes as you slowly add more corn flour.
  3. Continue cooking until the dough pulls away from the pan and becomes very thick.
