Summer Arugula Salad with Basil Vinaigrette

This fresh and simple summer arugula salad is filled with all of my favorite ingredients: couscous, avocado, corn, tomatoes, cheese, pepitas, and a simple basil vinaigrette. Serve with any summer meal or make it your summer meal!

Ingredients

  • 5 ounces arugula
  • 1 cup Israeli couscous cooked
  • 1 cup grape tomato halved
  • 1 avocado chopped, large
  • 1 sweet corn kernels removed, ear
  • 1/3 cup White Cheddar Cheese shredded
  • 1/4 cup Pepitas
  • basil vinaigrette for dressing the salad

Instructions

  1. In a large bowl, combine arugula, cooked Israeli couscous, tomatoes, avocado, corn, white cheddar cheese, and pepitas. Drizzle the salad with basil vinaigrette and toss until combined. Serve immediately.
