Summer Farro Salad
Summer Farro Salad combines cooked farro with fresh greens, juicy peach slices, blueberries, grape tomatoes, sweet corn kernels, feta cheese, and chopped basil. It's dressed with a bright vinaigrette of olive oil, lemon juice, champagne vinegar, garlic, and shallot. The salad offers a mix of chewy, crisp, sweet, and tangy elements that balance well for a refreshing meal or side dish during warmer months.
Ingredients
For the salad:
- 2 cups farro cooked
- 2 cups greens spinach, kale, mixed greens, etc, of your choice
- 2 peach pitted and sliced, large
- 1 1/2 cups blueberries
- 1 1/2 cups grape tomato halved
- 2 sweet corn kernels removed (about 1 1/2 cups, small ears
- 1/2 cup feta cheese crumbled
- 3 tablespoons basil chopped
For the dressing:
- 1/3 cup olive oil
- lemon juice of 1
- 1 tablespoon champagne vinegar or white balsamic vinegar
- 2 cloves garlic minced
- 1 shallot minced, small
- black pepper to taste, Kosher salt
- salt to taste, Kosher salt
Instructions
- In a large bowl combine the farro, greens, peach slices, blueberries, tomatoes, corn, feta, and basil.
- In a small bowl, combine the olive oil, lemon juice, vinegar, garlic, shallot, salt, and pepper. Whisk until well combined.
- Drizzle the dressing over the salad and gently toss until salad is well coated. Serve immediately.
