For the salad:

  • 2 cups farro cooked
  • 2 cups greens spinach, kale, mixed greens, etc, of your choice
  • 2 peach pitted and sliced, large
  • 1 1/2 cups blueberries
  • 1 1/2 cups grape tomato halved
  • 2 sweet corn kernels removed (about 1 1/2 cups, small ears
  • 1/2 cup feta cheese crumbled
  • 3 tablespoons basil chopped

For the dressing:

  • 1/3 cup olive oil
  • lemon juice of 1
  • 1 tablespoon champagne vinegar or white balsamic vinegar
  • 2 cloves garlic minced
  • 1 shallot minced, small
  • salt to taste, Kosher salt
  • black pepper to taste, Kosher salt

Instructions

  1. In a large bowl combine the farro, greens, peach slices, blueberries, tomatoes, corn, feta, and basil.
  2. In a small bowl, combine the olive oil, lemon juice, vinegar, garlic, shallot, salt, and pepper. Whisk until well combined.
  3. Drizzle the dressing over the salad and gently toss until salad is well coated. Serve immediately.
