Ingredients

  • 2 pounds ground beef
  • ½ cup red onion, diced
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic, minced
  • 1 large tomato, diced
  • 1 tablespoon jalapeño, diced (add more or less to control the heat)
  • 2 cups zucchini, diced
  • 2 cans (10.5 ounces) cream of mushroom soup
  • 2 cups (480 g) chicken broth
  • 2 cups small shell pasta, uncooked
  • Salt, to taste

Instructions

  1. Preheat the oven to 350°F.
  2. To a large (13-inch) oven-safe skillet, add ground beef, onion, salt, and pepper. Use a wooden spoon to break up the meat and mix together. Place the skillet over medium heat and cook until almost all of the pink is gone (about 8 minutes). Drain grease.
  3. Add the garlic and cook one more minute.
  4. Add the tomatoes, jalapenos, and zucchini to the skillet and mix well.
  5. Pour in the cream of mushroom soup, chicken broth, and uncooked noodles. Stir to combine.
  6. Cover the skillet with aluminum foil and transfer to the oven.
  7. Bake covered for 25-30 minutes or until the noodles are cooked through.
  8. Remove from oven. Let cool for 5-10 minutes before serving.
