Summer Peach Crisp

Summer Peach Crisp is an EASY summer treat with only a few simple ingredients. Tastes the best with a scoop of vanilla ice cream!

Ingredients

Topping
  • 1 cup butter cold
  • 1 cup brown sugar
  • 1 cup flour
  • 1 cup oatmeal
  • ¼ teaspoon baking powder
  • vanilla ice cream
Filling
  • 8 cup peaches peeled and sliced (or canned unsweetened peach slices)
  • 1 cup sugar
  • ½ cup flour
  • ½ teaspoon cinnamon
  • 2 Tablespoon lemon juice

Instructions

  1. Preheat oven to 350-degrees. In a large bowl, mix butter, brown sugar, flour, oatmeal and baking powder just until the butter is broken up and ingredients are mixed.
  2. Mixture should be crumbly. Set aside.
  3. In a separate large bowl, gently combine peaches, sugar, flour, cinnamon and lemon juice.
  4. Transfer peach mixture to a 9x13 inch dish.
  5. Crumble crisp topping on top.
  6. Bake for 35-45 minutes or until golden brown.
  7. Serve warm with a scoop of vanilla ice cream. Enjoy!

Notes

  • Single Serve Ramekin Summer Peach Crisp: 
  • sliced (or 6-8 canned unsweetened peach slices)
  • raisins, craisins, or other dried fruit
  • Directions:
  • Preheat oven to 350-degrees. Toss peaches,fruit medley, sugar, cinnamon, almond extract and flour together in a small bowl. Transfer to a small ramekin, souffle dish or other small/individual-sized oven-safe dish. Sprinkle on granola and bake for 10-15 minutes or until granola turns golden-brown. Top with a scoop of vanilla ice cream and serve!
