Summer Peach Crisp is an EASY summer treat with only a few simple ingredients. Tastes the best with a scoop of vanilla ice cream!

Ingredients
Topping
- 1 cup butter cold
- 1 cup brown sugar
- 1 cup flour
- 1 cup oatmeal
- ¼ teaspoon baking powder
- vanilla ice cream
Filling
- 8 cup peaches peeled and sliced (or canned unsweetened peach slices)
- 1 cup sugar
- ½ cup flour
- ½ teaspoon cinnamon
- 2 Tablespoon lemon juice

Instructions
- Preheat oven to 350-degrees. In a large bowl, mix butter, brown sugar, flour, oatmeal and baking powder just until the butter is broken up and ingredients are mixed.
- Mixture should be crumbly. Set aside.
- In a separate large bowl, gently combine peaches, sugar, flour, cinnamon and lemon juice.
- Transfer peach mixture to a 9x13 inch dish.
- Crumble crisp topping on top.
- Bake for 35-45 minutes or until golden brown.
- Serve warm with a scoop of vanilla ice cream. Enjoy!

- sliced (or 6-8 canned unsweetened peach slices)
- raisins, craisins, or other dried fruit

Transfer to a small ramekin, souffle dish or other small/individual-sized oven-safe dish. Sprinkle on granola and bake for 10-15 minutes or until granola turns golden-brown.
