Summer Tomato Salsa
Summer Tomato Salsa mixes finely diced vine-ripened tomatoes, purple onion, and sweet corn with fresh coriander and a splash of lime juice for brightness. Olive oil adds richness while sea salt and black pepper balance flavors. The result is a fresh, chunky salsa that captures the essence of ripe summer tomatoes, ideal for scooping with corn chips or as a topping for grilled dishes.
Ingredients
- 6 tomato vine-ripened, finely diced
- 1 onion finely diced, large, purple
- 1 corn kernel sweet, 420 gram (15 oz), drained, canned
- 1 bunch Coriander
- 1 lime juice only
- 3 tablespoons olive oil extra virgin
- sea salt flakes
- black pepper freshly ground
Instructions
- Combine the tomatoes, onion, corn, coriander and lime juice in a mixing bowl.
- Stir in extra virgin olive oil until desired consistency.
- Season with salt and pepper to taste.
- If you like a little kick add some chopped chillis (chilli peppers) or Tabasco and serve with corn chips & sour cream.
