Ingredients
Salad
- 1 cup orzo
- 1 cup corn if using fresh I recommend grilling it, fresh or frozen
- 1 cup cherry tomatoes halved
- 2 peach diced
- 1 jalapeno pepper deseeded and finely chopped
- 2 green onion sliced thin
- 1 tablespoon basil chopped, fresh
- black pepper kosher salt; freshly ground; to taste

Dressing
- 2 tablespoons lime juice fresh
- 1 tablespoon olive oil
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon cumin ground
- 1/4 teaspoon garlic powder

Instructions
- Cook the orzo according to package instructions. Once cooked, cool completely or rinse under cold water and drain. Add the orzo to a large serving bowl along with the remaining salad ingredients.
- In a small bowl whisk together the dressing ingredients then pour it onto the salad. Toss everything together and taste for seasoning. Serve immediately or cover and refrigerate until ready to serve.
