  • 1 cup corn if using fresh I recommend grilling it, fresh or frozen
  • 1 cup cherry tomatoes halved
  • 2 peach diced
  • 1 jalapeno pepper deseeded and finely chopped
  • 2 green onion sliced thin
  • 1 tablespoon basil chopped, fresh
  • salt kosher salt; freshly ground; to taste
  • black pepper kosher salt; freshly ground; to taste

Dressing

  • 2 tablespoons lime juice fresh
  • 1 tablespoon olive oil
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon cumin ground
  • 1/4 teaspoon garlic powder
  • salt kosher salt; freshly ground; to taste
  • black pepper kosher salt; freshly ground; to taste

Instructions

  1. Cook the orzo according to package instructions. Once cooked, cool completely or rinse under cold water and drain. Add the orzo to a large serving bowl along with the remaining salad ingredients.
