Sun Dried Tomato Quinoa Salad
This Sun Dried Tomato Quinoa Salad is so easy to make and full of Mediterranean flavor! It's healthy and naturally gluten free.
Ingredients
Quinoa Salad
- 1 cup quinoa uncooked
- 1/4 cup sun dried tomatoes drained and chopped, packed in olive oil
- 1/4 cup red onion diced
- 1/4 cup feta cheese crumbled
- 1/4 cup flat leaf parsley chopped
- 1/4 cup pine nut or walnuts, toasted
- black pepper fresh ground, to taste
- kosher salt fresh ground, to taste
Vinaigrette
- 1/4 cup lemon juice fresh
- 1 tablespoon Dijon mustard
- 2 tablespoons extra virgin olive oil
- 2 teaspoons honey or maple syrup
- black pepper fresh ground, to taste
- kosher salt fresh ground, to taste
Instructions
- Cook the quinoa according to the tips I've listed above or package instructions. After the quinoa is cooked let it cool to room temperature.
- Add the quinoa, sun dried tomatoes, onion, feta, parsley and pine nuts to a serving bowl. Season with salt and pepper.
- Whisk together the ingredients for the vinaigrette and pour over the salad. Toss everything together and taste for seasoning.
