Sunshine Chicken
Sunshine Chicken features boneless chicken breasts coated with a mixture of lemon-flavored gelatin, butter, prepared mustard, and garlic salt, then topped with sliced almonds. The dish bakes to yield tender chicken with a tangy, subtly sweet glaze and a crunchy almond topping.
Ingredients
- 1 package lemon-flavored gelatin dessert 3 ounces, Jell-O brand
- 2 tablespoons butter melted
- 3 tablespoons prepared mustard
- 2 teaspoons garlic salt
- 2 pounds chicken breasts boneless, skinless halves
- 2 tablespoons almonds thinly sliced
Instructions
- Preheat oven to 350 degrees.
- In a small bowl combine gelatin, butter, mustard, garlic, salt and pepper. Brush over both sides of the chicken breasts and place in an ungreased baking dish.
- Sprinkle almonds on top of chicken. Cover and bake at 350 degrees for 20 to 25 minutes. Basting once.
- Bake uncovered for 15 minutes longer or until done. Serve with rice if desired.
Notes
- Either yellow prepared mustard or Dijon mustard works well for the glaze.
- For added freshness, top the finished chicken with chopped chives or parsley.
- Serve alongside rice to complement the tangy, nutty flavors.
