Sunshine Chicken

Sunshine Chicken features boneless chicken breasts coated with a mixture of lemon-flavored gelatin, butter, prepared mustard, and garlic salt, then topped with sliced almonds. The dish bakes to yield tender chicken with a tangy, subtly sweet glaze and a crunchy almond topping.

Description

The Sunshine Chicken recipe uses a lemon gelatin mix blended with melted butter, mustard, garlic salt, and pepper to form a glossy glaze that coats the chicken breasts. Baking covered initially helps the flavors penetrate the meat while keeping it moist, and uncovered finishing develops a slight crispness to the almond topping. The almonds add texture contrast, providing a gentle crunch atop the tender, juicy chicken.

This dish pairs well with a side of rice or simple vegetables, making a balanced and flavorful main course. The glaze imparts a bright, slightly sweet tang from the gelatin and lemon flavor that complements the savory mustard and garlic notes.

The recipe notes indicate you can use either yellow or Dijon mustard depending on taste, and fresh herbs like chives or parsley can be added as a garnish for a colorful presentation and herbal freshness.

Ingredients

Servings
  • 1 package lemon-flavored gelatin dessert 3 ounces, Jell-O brand
  • 2 tablespoons butter melted
  • 3 tablespoons prepared mustard
  • 2 teaspoons garlic salt
  • 2 pounds chicken breasts boneless, skinless halves
  • 2 tablespoons almonds thinly sliced

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl combine gelatin, butter, mustard, garlic, salt and pepper. Brush over both sides of the chicken breasts and place in an ungreased baking dish.
  3. Sprinkle almonds on top of chicken. Cover and bake at 350 degrees for 20 to 25 minutes. Basting once.
  4. Bake uncovered for 15 minutes longer or until done. Serve with rice if desired.

Notes

  • Either yellow prepared mustard or Dijon mustard works well for the glaze.
  • For added freshness, top the finished chicken with chopped chives or parsley.
  • Serve alongside rice to complement the tangy, nutty flavors.
