Sunshine Fruit Salad

Sunshine Fruit Salad blends pineapple tidbits, mandarin oranges, strawberries, bananas, and blueberries with instant vanilla pudding made using reserved juice from the canned fruits. The result is a creamy, chilled fruit salad combining sweet, tart, and fresh flavors, suitable for a refreshing dessert or snack.

Ingredients

  • 1 can 20 oz pineapple tidbits
  • 1 can 11 oz mandarin oranges
  • 1 pkg 3.4 oz instant vanilla pudding
  • 1 c. strawberry quartered
  • 1 c. banana sliced
  • 1 c. blueberries

Instructions

    Cup of Yum
  1. First drain pineapple and oranges, reserving liquid. Prepare the pudding with 1 c. of the reserved liquid, whisking until mixture is smooth.
  2. In a large bowl combine pineapple, strawberries and oranges. Gently fold in pudding mixture. Refrigerate until ready to serve.
  3. Add bananas and blueberries to mixture right before serving.
