Sunshine Fruit Salad
Description
The Sunshine Fruit Salad recipe mixes canned pineapple and mandarin oranges drained to save their juice, which is then used to prepare instant vanilla pudding, giving the salad a smooth, creamy bind. Fresh strawberries, bananas, and blueberries add freshness and texture, with the bananas and blueberries folded in right before serving to avoid browning and maintain their firmness. The pudding contributes sweetness and a velvety consistency that contrasts with the vibrant fruit pieces.
This chilled salad delivers a bright and pleasant combination of citrus and berry flavors, ideal for warm days or as a light, fruity dessert. The use of canned fruit juice for pudding also enhances cohesion without added sugars beyond what the canned fruits provide.
