These Super Seed Buckwheat Waffles blend buckwheat flour with finely ground sunflower and pumpkin seeds plus flaxseed, creating a gluten-free, vegan batter. The waffles bake up crisp and nutty with a tender crumb, naturally sweetened by coconut sugar and balanced with a hint of salt. Coconut oil and coconut water add moisture and subtle flavor, making these waffles hearty and wholesome.
Ingredients
- 1 cup buckwheat flour I use this brand
- 1/3 cup sunflower seeds raw
- 2 tbsp pumpkin seeds raw
- 2 tbsp Flaxseed ground
- 1 tbsp coconut sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tbsp coconut oil melted
- 1 1/4 cup coconut water
Instructions
- Place the sunflower seeds and pumpkin seeds in a food processor and pulse until finely ground into a flour. Transfer the seed flour to a bowl and add the buckwheat flour, ground flax seeds, coconut sugar, baking soda and salt. Whisk all dry ingredients together.
- Add the coconut oil and coconut water and whisk into a batter.
- Heat a waffle maker and pour a ladle-full of batter onto the waffle plates. Cook until golden.
- Serve with sliced banana, strawberries and maple syrup.
