For Salad
- 8 oz surimi diced
- 1/2 cucumber diced
- 1/4 of Purple Onion chopped
- 1 avocado diced
For Sesame Dressing
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame seed oil
- 1 tablespoon toasted sesame seeds
- 1 teaspoon sugar
Garnish
- cherry tomatoes
- sesame seeds
Instructions
- For Salad
- Toss the diced veggies and surimi together in one bowl
- For Dressing
- Whisk all the sesame dressing ingredients together in one bowl
- Assembly
- Pour dressing over salad and toss
- Garnish with tomato and more sesame seeds (optional)
