Ingredients

The Salad:
  • 2 cups brown rice cooked
  • 3 ½ cup arugula
  • 4 ounces smoked salmon chopped
  • 1 ¼ cup cucumber English, chopped
  • ¼ cup pickled ginger chopped
  • 1 nori cut into 1-inch pieces, dried, sheet
The dressing:
  • 1 ½ tablespoons soy sauce
  • 1 tablespoons rice vinegar
  • 1 teaspoon wasabi paste
  • ¾ teaspoon agave nectar or honey
  • 2 teaspoons olive oil
  • ½ teaspoon sesame oil

Instructions

The Salad:
    Cup of Yum
  1. In a large bowl, combine the brown rice, arugula, smoked salmon, cucumber, pickled ginger and ¾ of the nori pieces.
  2. Pour in the dressing and toss to combine. Sprinkle the remaining nori pieces over top. Serve.
The Dressing:
  1. In a small bowl, whisk together soy sauce, rice vinegar, wasabi paste and agave nectar. While whisking, add the olive oil and sesame oil.
