Ingredients

Sauce
  • ½ cup white sugar
  • ⅓ cup apple cider vinegar
  • 3 tbsp pineapple juice from the canned pineapple pieces
  • 3 tbsp ketchup
  • 1 tsp Worcestershire sauce gluten-free Worcestershire sauce
  • 1 tsp Worcestershire sauce gluten-free soy sauce, or soy sauce
  • 1 tsp oyster sauce
  • ¼ tsp salt
Thickener
  • 1 tbsp corn starch mixed together, plus 2 tbsp water
Stir Fry
  • 1½ tbsp vegetable oil
  • 1 garlic finely chopped, clove
  • ½ onion halved and sliced
  • 400 gms chicken thigh fillet cut into bite size pieces, 13 oz
  • 1 red bell pepper cut into bite size pieces, or capsicum
  • 1 green capsicum cut into bite size pieces, or bell pepper
  • 250 gms pineapple pieces 8 oz., canned in natural juice
  • shallots for garnish, or scallions, sliced
