Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 yellow onion , cut into 1/2" chunks
  • 1/2 green bell pepper , cut into 1/2" chunks
  • 1/2 red bell pepper , cut into 1/2" chunks
  • 1/2 cup  ketchup
  • 2 cups tomato sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons low sodium soy sauce
  • 1/2 cup pineapple juice
  • 1 cup pineapple chunks

Instructions

    Cup of Yum
  1. Brown ground beef with onion and green pepper.
  2. Drain off any grease.
  3. Add remaining ingredients except rice.
  4. Bring to a boil, reduce heat, and simmer uncovered for 10 minutes.
  5. Serve over hot cooked rice.
