Sweet and Spicy Chicken Zoodles

Ingredients

  • 2-3 boneless, skinless chicken breasts cut into bite-size pieces
  • 1 tablespoon olive oil
  • 2 medium zucchini spiralized on medium setting
  • 2 cloves garlic minced
  • 2 tablespoons Sriracha sauce or more to taste
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • Juice of 1/2 lime
  • red pepper flakes to taste

Instructions

  1. Prep your chicken and add it to a large skillet along with the olive oil. Stir until chicken is coated. Cook over medium-high heat, stirring often, for 5-7 minutes, or until it's cooked through (don't overcook). 
  2. Meanwhile, spiralize the zucchini then add the garlic, sriracha, hoisin sauce, soy sauce, lime juice, and red pepper flakes to a small bowl and whisk together.
  3. When the chicken is about done, pour the sauce into the skillet. Stir to coat the chicken then cook for about a minute. 
  4. Add the zucchini noodles to the skillet and toss for a minute or two until they're warmed through. Serve immediately.
