Sweet Chili Sauce

Ingredients
- 1/3 cup rice vinegar
- 1/3 cup water (divided)
- 1/3 cup white sugar
- 1 tablespoon sambal oelek (to taste)
- 2 teaspoons cornstarch
Instructions
- Combine the rice vinegar, white sugar, sambal oelek and half of the water in a small saucepan.
- Bring to a boil, stirring, cooking until the sugar has dissolved completely.
- Combine the cornstarch with the remaining water, then whisk into the pot rapidly.
- Continue to cook until the sauce thickens.
- Remove and enjoy!
- Store in a closed container in the fridge for up to a week.
