Ingredients

  • 4 salmon fillets
  • 4 tbsp sweet chilli sauce
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 3 cloves garlic Minced
  • salt To taste
  • black pepper To taste
  • 1 tbsp olive oil
  • Coriander Garnish

Instructions

  1. Begin by preheating the oven to 200°C/400°F and prepare a baking sheet with parchment paper.
  2. Whisk together the sweet chilli sauce, soy sauce, lime juice, honey, minced garlic, salt, and pepper in a small bowl.
  3. Place the salmon fillets on the prepared baking sheet and generously brush the sweet chilli mixture over each fillet, reserving a small amount for later use.
  4. Bake the salmon in the preheated oven for approximately 10-12 minutes, or until it's fully cooked and flaky.
  5. While the salmon is cooking, heat olive oil in a small pan over medium heat.
  6. Next, add the reserved sweet chilli sauce mixture to the pan and bring it to a simmer.
  7. Simmer the mixture for 2-3 minutes while stirring constantly, until it thickens and becomes syrupy.
  8. Once the salmon is cooked, remove it from the oven and drizzle the sweet chilli sauce over each fillet.
  9. For garnish, you can add some freshly chopped coriander or parsley, if desired. Serve the sweet chilli salmon immediately.

Notes

  • Use fresh minced garlic for the best flavor in the sauce.
  • Make sure to reserve some of the sweet chilli mixture before brushing on salmon to create the finishing sauce.
  • Serve the salmon shortly after baking to enjoy its tender, flaky texture.
  • Fresh coriander adds a fresh note and can be substituted with parsley if preferred.
