Sweet Corn Soup

Ingredients

  • 8 ounces thick-cut bacon , chopped
  • 1/2 yellow onion , chopped
  • 1 garlic cloves , minced
  • 6 cups vegetable stock
  • 6 cups super sweet yellow corn , I prefer frozen or fresh
  • 1 teaspoons kosher salt
  • 1 teaspoon coarse ground black pepper
  • 1/2 cup heavy cream

Instructions

  1. Add the bacon to a large dutch oven and cook until crisp on medium heat then remove the bacon from the pan.
  2. Discard all but 3 tablespoons of the oil and add the onions and garlic on medium-low heat, cooking for 5-6 minutes until they are translucent.
  3. Add in the vegetable stock, corn, salt and pepper and let simmer for 30 minutes.
  4. Using an immersion blender, blend the soup until creamy for 4-5 minutes.
  5. Add in the heavy cream, stir until combined, then serve topped with bacon crumbles.
