Sweet Potato Black Bean Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried red chili flakes or more to taste
  • 2 carrots peeled and chopped
  • 2 medium sweet potatoes peeled and diced
  • 2 cups vegetable stock 500ml
  • 2 cups water 500ml
  • 15 ounce can black beans drained and rinsed 400g
  • 15 ounce can chopped or crushed tomatoes 400g
  • salt and pepper
  • Juice of ½ a lime

Instructions

  1. Heat the oil in a large pan, then add the onion and fry for 5 minutes or until softened but not browned.
  2. Add the garlic, cumin, smoked paprika and dried chili flakes and cook for 1 minute.
  3. Stir in the carrots, sweet potatoes, vegetable stock, water, black beans and canned tomatoes. Bring to the boil, then reduce the heat and simmer, uncovered, for 25 minutes.
  4. Stir in the lime juice and season with salt and pepper.
