Ingredients
- 2 tablespoons olive oil
- 2 medium sweet potatoes skin on diced into bite sized chunks
- 1 white sweet potato diced into bite sized chunks
- 1 ½ teaspoons sea salt
- ½ teaspoon black pepper
- 2 teaspoons minced garlic
- ¼ red bell pepper chopped
- ¼ green bell pepper chopped
- garlic salt (with parsley flakes)
- 4 eggs mixed
- ½ cup cheese
Instructions
- In a large skillet heat olive oil over medium high heat.
- Add the potatoes along with the salt and pepper. Stir.
- Cover the pan, lower the heat, and cook for 15 minutes. Stir every 4-5 minutes. Cook until potatoes are almost tender.
- Remove the lid, turn to high heat and stir in the garlic, bell peppers, and eggs. Cook for another 5 minutes or until the eggs are cooked and the potatoes are tender and browned.
- Remove from heat, add cheese and serve.
