Sweet Potato Breakfast Recipe

Ingredients

  • 2 tablespoons olive oil
  • 2 medium sweet potatoes skin on diced into bite sized chunks
  • 1 white sweet potato diced into bite sized chunks
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 2 teaspoons minced garlic 
  • ¼ red bell pepper chopped
  • ¼ green bell pepper chopped
  • garlic salt (with parsley flakes)
  • 4 eggs mixed
  • ½ cup cheese

Instructions

  1. In a large skillet heat olive oil over medium high heat.
  2. Add the potatoes along with the salt and pepper. Stir.
  3. Cover the pan, lower the heat, and cook for 15 minutes. Stir every 4-5 minutes. Cook until potatoes are almost tender.
  4. Remove the lid, turn to high heat and stir in the garlic, bell peppers, and eggs. Cook for another 5 minutes or until the eggs are cooked and the potatoes are tender and browned. 
  5. Remove from heat, add cheese and serve.
