Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons salt
  • 2 large eggs
  • 1 tablespoon honey
  • 1 cup cooked sweet potato mashed
  • 1 3/4 cups half-and-half
  • 1/3 cup unsalted butter melted
  • honey butter for serving optional

Instructions

  1. Preheat the oven to 375°F and grease a 9-inch square baking pan.
  2. In a large bowl, whisk together cornmeal, flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, honey, mashed sweet potato, half-and-half, and melted butter.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared pan and bake for 30-40 minutes, until a toothpick inserted in the center comes out clean.
  6. Slice and serve with honey butter if using.
