Sweet Potato Leaves Stir Fry
This stir fry highlights fresh sweet potato leaves cooked briefly with garlic, salt, and a splash of water to maintain their bright green color and tender texture. The method involves soaking and rinsing the leaves to reduce bitterness, then sautéing with garlic for fragrant depth. The final stir fry is soft but still retains some structure, making it a light, slightly earthy side dish.
Ingredients
- 1.5 pounds sweet potato leaves (Yam leaves)
- 4 cloves garlic
- 1 tablespoon vegetable oil
- ⅛ teaspoon salt
- ½ cup water
Instructions
- Put 1.5 pounds of yam leaves into a big pot. Pour 12 cups of water to soak it for 15 minutes. Then, wash and rinse it 3 times. Then, drain and set it aside.
- Peel and cut 4 cloves of garlic into slices.
- Pour 1 tablespoon of vegetable oil into the pot or wok. Turn on the fire to medium small, add the sliced garlic from step 2. Stir fry them a little bit or until it’s slightly golden brown.
- Next, put the washed yam leaves from step 1 into the pot or wok. Pour ½ cup of water and ⅛ teaspoon of salt. Then, cover the lid and let it cook for 2 minutes.
- After that, open the lid, flip the vegetables and stir fry it for 1-2 minutes or until it’s soft.
Notes
- Select fresh sweet potato leaves without discoloration for optimal taste and texture.
- Remove thick stems to avoid toughness in the dish.
- Preheat the pan and lightly brown garlic in oil to release its aroma and infuse the dish.
- Add water and salt, cover to steam the leaves briefly, then stir fry until softened for best texture.
