Sweet Potato Leaves Stir Fry

This stir fry highlights fresh sweet potato leaves cooked briefly with garlic, salt, and a splash of water to maintain their bright green color and tender texture. The method involves soaking and rinsing the leaves to reduce bitterness, then sautéing with garlic for fragrant depth. The final stir fry is soft but still retains some structure, making it a light, slightly earthy side dish.

Description

Sweet Potato Leaves Stir Fry combines fresh yam leaves with simple aromatics like sliced garlic and vegetable oil. The leaves are soaked and washed thoroughly before cooking to clean and soften them. By cooking briefly with just a bit of water and salt under a lid, the dish steams slightly, making the leaves tender without losing their vibrant color. Stir frying at the end ensures the garlic flavor is well distributed and the leaves develop a subtle softness.

The flavor is mild and earthy, enhanced by the toasty garlic essence. The texture is tender with minimal chew, typical of leafy greens cooked quickly. This preparation keeps the dish light and straightforward.

Serve this stir fry as a vegetable side dish to accompany rice and protein in a meal. It pairs well with dishes that have more robust or rich flavors to balance the mildness of the leaves. The garlic-infused oil adds a savory note suitable for everyday meals.

Choose fresh, unblemished sweet potato leaves and remove tough stems before cooking for best results. The soaking step is important for cleanliness and improving texture. Adjust salt and cooking time to taste, ensuring the leaves are soft but not overcooked.
