Sweet Potato Tacos

Ingredients

  • 1 ½ pounds sweet potatoes peeled & cut into ½ " cubes
  • 2 tablespoons olive oil divided
  • 1 tablespoon taco seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 cup corn kernels frozen, thawed
  • ½ red bell pepper diced
  • 8 small flour tortillas or corn tortillas
  • 1 lime juiced
  • 2 tablespoons chopped fresh cilantro
  • toppings as desired

Instructions

  1. Preheat oven to 450°F. Line a baking pan with parchment paper.
  2. Combine taco seasoning, salt, pepper, and garlic powder in a small bowl.
  3. Toss sweet potatoes with 1 tablespoon olive oil and half of seasoning mix.
  4. Spread sweet potatoes on the pan and roast 15 minutes.
  5. Meanwhile, toss corn and peppers with remaining olive oil and seasoning mix. Add the vegetables to the pan with sweet potatoes and stir. Roast an additional 12-14 minutes or until tender and lightly browned.
  6. While vegetables are roasting, heat tortillas according to package directions.
  7. Remove potato mixture from the oven and toss with lime juice and cilantro.
  8. Serve in heated tortillas with toppings as desired.
