Sweet Potato Wedges

These crispy, oven-baked wedges are the perfect side dish or snack for any day of the week!

Ingredients

  • 2 pounds sweet potatoes small
  • 2 tablespoons olive oil
  • ½ teaspoon seasoned salt
  • black pepper to taste

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. Scrub potatoes (or peel if preferred). Cut into 1" thick wedges.
  3. Toss potatoes with oil and seasonings. Place potatoes skin side down on prepared baking sheet.
  4. Bake until golden brown, about 35-40 minutes.

Notes

  • For leftovers, pop back into a preheated oven for 5-10 minutes or until heated through!
